La Rocciata is a traditional dessert in Assisi, similar to strudel, made with a thin-rolled dough and filled with apples, nuts, raisins, and spices.

Ingredients

  • Prepared pizza dough (or you can, of course, make your own)  
  • 3 tablespoons apricot jam (or increase sugar from 4 tablespoons to 6) 
  • 1 apple 
  • 1/2 c raisins 
  • 1/4 c almonds 
  • 1/4 c walnuts 
  • 1/4 c walnuts (or additional ¼ c almonds) 
  • 4 tablespoons sugar 
  • 2 teaspoons cinnamon 

Directions

  • Begin with soaking raisins in ½ c water for at least 30 min. Peel, core, and dice the apple into small cubes. Roughly chop nuts. Once raisins have plumped up, remove from liquid and mix them in a bowl with apple and nuts. Set aside. 
  • Roll out the dough as thinly as possible to a large rectangle, spread apricot jam over it (it’s easier if you heat jam a little first)–or sprinkle with 4 tablespoons sugar. 
  • Spread the fruit filling across the middle of the dough, making sure to leave a border around the edge. Roll dough into a tube and seal the ends. Bake at 350 degrees for 40 minutes. 
  • Remove from the oven and place on rack to cool. When cool, dust with powdered sugar before serving.
