Traditional Indian cuisine, such as butter chicken, is always a good way to honor St. Thomas.

Easiest Butter Chicken

Ingredients
- 1 tablespoon oil
- 1 tablespoon butter
- 1 medium onion, diced
- 1 teaspoon chopped fresh ginger (or ginger paste)
- 3 cloves garlic, finely chopped
- 4 boneless, skinless chicken thighs, cut into ¾-inch chunks
- 8 oz can tomato sauce
- 1 tablespoon garam masala
- 1 teaspoon chili powder
- 1 teaspoon fenugreek powder (best for authentic taste, but can omit)
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream or half & half or plain yogurt
Directions
- Heat a large skillet over medium-high heat. Add the oil, butter, and onions and cook onions until golden brown, about 3-4 minutes. Add ginger and garlic. Stir.
- Add chicken, tomato sauce, and spices. Cook about five minutes, until everything is cooked through.
- Add cream (or half-and-half or yogurt) and simmer 8-10 minutes, stirring occasionally. Serve over rice (especially good with basmati rice) or with a traditional Indian bread called naan.
