Many Indian Catholic communities credit St. Thomas with bringing the gospel to India and consider him to be a patron saint.

Traditional Indian cuisine, such as butter chicken, is always a good way to honor St. Thomas.

Easiest Butter Chicken

Ingredients

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 medium onion, diced
  • 1 teaspoon chopped fresh ginger (or ginger paste)
  • 3 cloves garlic, finely chopped
  • 4 boneless, skinless chicken thighs, cut into ¾-inch chunks
  • 8 oz can tomato sauce
  • 1 tablespoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon fenugreek powder (best for authentic taste, but can omit)
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream or half & half or plain yogurt

Directions

  • Heat a large skillet over medium-high heat. Add the oil, butter, and onions and cook onions until golden brown, about 3-4 minutes. Add ginger and garlic. Stir.
  • Add chicken, tomato sauce, and spices. Cook about five minutes, until everything is cooked through.
  • Add cream (or half-and-half or yogurt) and simmer 8-10 minutes, stirring occasionally. Serve over rice (especially good with basmati rice) or with a traditional Indian bread called naan.
