Magdalena Cakes
Heat Oven: 375F
Ingredients
- 4 eggs
- 3/4 cups sugar
- 8 tablespoons (1 stick) butter, melted
- 1 2/3 cups flour
- 1 tablespoon baking powder
- zest of 1 lemon
- 1 teaspoon vanilla extract
- 1 tablespoon milk
- ¼ cup powdered sugar (optional)
Directions
- Beat the eggs together with 3/4 cup sugar. Continue to beat the egg mixture, and slowly add melted butter. Then add lemon zest, vanilla, and milk, and mix well.
- In a separate bowl, mix flour and baking powder.
- Add the baking powder to the flour and mix thoroughly. Add the flour mixture to the egg mixture and mix well.
- Grease muffin tin or add paper liners. Add batter, filling each cup half full. Bake 18-20 minutes.
- Let cool and sprinkle each cake with powdered sugar (or serve as is).
