Magdalena Cakes

Heat Oven: 375F

Ingredients

  • 4 eggs 
  • 3/4 cups sugar  
  • 8 tablespoons (1 stick) butter, melted  
  • 1 2/3 cups flour 
  • 1 tablespoon baking powder 
  • zest of 1 lemon 
  • 1 teaspoon vanilla extract 
  • 1 tablespoon milk 
  • ¼ cup powdered sugar (optional) 

Directions

  • Beat the eggs together with 3/4 cup sugar. Continue to beat the egg mixture, and slowly add melted butter. Then add lemon zest, vanilla, and milk, and mix well.
  • In a separate bowl, mix flour and baking powder.  
  • Add the baking powder to the flour and mix thoroughly. Add the flour mixture to the egg mixture and mix well. 
  • Grease muffin tin or add paper liners. Add batter, filling each cup half full. Bake 18-20 minutes. 
  • Let cool and sprinkle each cake with powdered sugar (or serve as is).
